Ingredients
  

  • 1 pound baby carrots
  • 2 tablespoons butter
  • 2 tablespoons brown sugar
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1 tablespoon fresh parsley chopped (optional)

Method
 

  1. Place carrots in a medium saucepan and add enough water to cover by 1 inch. Add a pinch of salt to the water.
  2. Bring water to a boil over high heat, then reduce to medium. Simmer carrots for 7-9 minutes until fork-tender but not mushy.
  3. Drain carrots in a colander and return the empty pot to medium-low heat.
  4. Add butter to the pot and allow it to melt completely.
  5. Stir in the brown sugar until dissolved and the mixture begins to bubble slightly.
  6. Return drained carrots to the pot and gently toss to coat with the butter-sugar mixture.
  7. Season with salt and pepper, continuing to cook for 2-3 minutes until carrots are glazed and heated through.
  8. Transfer to a serving dish and garnish with fresh parsley if desired.
