Ingredients
  

  • 1 pound bacon about 16-20 slices, each slice cut into thirds
  • 1 14-ounce package little smokies sausages (approximately 40-45 pieces)
  • 1 cup brown sugar packed
  • ¼ teaspoon cayenne pepper optional, for a touch of heat
  • Toothpicks or small skewers for securing

Method
 

  1. Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper or aluminum foil for easy cleanup.
  2. Cut each bacon slice into thirds. This creates the perfect size pieces to wrap around each little smokie.
  3. Wrap each little smokie with a piece of bacon, securing with a toothpick. Place them on the prepared baking sheet, making sure they're not touching.
  4. In a small bowl, combine the brown sugar and cayenne pepper (if using). Generously sprinkle the mixture over the bacon-wrapped smokies, coating all sides.
  5. Bake in the preheated oven for 20-25 minutes, or until the bacon is crisp and the sugar has caramelized into a sticky, delicious glaze.
  6. For extra crispiness, you can broil for the final 1-2 minutes, watching carefully to prevent burning.
  7. Remove from the oven and let cool for 5 minutes before serving. The sugar coating will be extremely hot right out of the oven!
