Method
- Gather your ingredients. Measure out potatoes, salt, and butter before you begin.
- Wash and scrub the potatoes under cold water. Leave the skins on for that old-world texture.
- In a large pot, bring 8 cups of water to a boil. Stir in the cup of kosher salt until it dissolves completely.
- Add the potatoes, reduce the heat to medium, and cook for about 20 minutes, or until potatoes are fork-tender.
- Drain the potatoes in a colander. Return them to the pot off the heat and toss gently with butter.
- Transfer to a serving bowl, garnish with chopped parsley, and serve hot alongside your favorite grilled meats or burgers.
