Syracuse Salt Potatoes

Syracuse salt potatoes are a classic Upstate NY specialty dating back to the salt wells in the 1800s. Not only are they easy but they are tasty too.

Ingredients
  

  • 4 pounds new potatoes
  • 1 cup kosher salt for the boiling water
  • 4 tablespoons unsalted butter room temperature
  • Fresh parsley chopped (optional, for garnish)

Method
 

  1. Gather your ingredients. Measure out potatoes, salt, and butter before you begin.
  2. Wash and scrub the potatoes under cold water. Leave the skins on for that old-world texture.
  3. In a large pot, bring 8 cups of water to a boil. Stir in the cup of kosher salt until it dissolves completely.
  4. Add the potatoes, reduce the heat to medium, and cook for about 20 minutes, or until potatoes are fork-tender.
  5. Drain the potatoes in a colander. Return them to the pot off the heat and toss gently with butter.
  6. Transfer to a serving bowl, garnish with chopped parsley, and serve hot alongside your favorite grilled meats or burgers.
