  • 1 14.5 ounce can green beans, drained
  • 1 cup fresh red bell pepper finely diced
  • 1 cup fresh yellow bell pepper finely diced
  • 1 red onion finely chopped
  • 3 tablespoons fresh cilantro chopped
  • ½ cup white sugar
  • ½ cup olive oil
  • ½ cup red wine vinegar
  • 2 tablespoons fresh lime juice
  • 1 tablespoon lemon juice
  • 2 tablespoons Dijon mustard
  • 1 tablespoon ground cumin
  • 1 tablespoon freshly ground black pepper
  • 1 teaspoon salt
  • 2 cloves garlic minced

Method
 

  1. Gather all ingredients and ensure your workspace is clean and organized.
  2. In a large bowl, combine the drained and rinsed black beans, kidney beans, garbanzo beans, and green beans.
  3. Add the diced red and yellow bell peppers and chopped red onion to the bean mixture.
  4. Sprinkle the freshly chopped cilantro over the bean and vegetable mixture.
  5. In a separate bowl, whisk together the sugar, olive oil, red wine vinegar, lime juice, lemon juice, Dijon mustard, cumin, black pepper, salt, and minced garlic until the sugar is dissolved.
