- In a small bowl, combine paprika, garlic powder, dried thyme, dried rosemary, salt, and black pepper. Mix well to create your seasoning blend.
- Pat the pork chops dry with paper towels. This helps the seasoning stick and improves browning if you choose to sear them.
- Rub the seasoning mixture generously on both sides of each pork chop, pressing slightly to adhere.
- Optional but recommended: Heat olive oil in a large skillet over medium-high heat. Sear the seasoned pork chops for 2-3 minutes per side until golden brown. This step adds flavor but can be skipped if you're short on time.
- Place sliced onions and minced garlic in the bottom of your slow cooker.
- Arrange the seasoned pork chops (seared or not) on top of the onions.
- In a measuring cup, combine chicken broth and Worcestershire sauce, then pour around (not over) the pork chops to preserve the seasoning.
- Cover and cook on LOW for 4 hours or on HIGH for 2 hours. The pork chops should reach an internal temperature of 145°F (63°C) and be tender enough to cut with a fork.
- Carefully remove the pork chops and place them on a serving platter. Cover loosely with foil to keep warm.
- Optional gravy step: In a small bowl, whisk together cornstarch and cold water. Transfer the liquid from the slow cooker to a saucepan, bring to a simmer, then whisk in the cornstarch mixture. Cook for 2-3 minutes until thickened.
- Serve the pork chops with the cooked onions and gravy, garnished with fresh parsley.
