Ingredients
  

  • 4 1½-inch thick center-cut boneless pork chops
  • 1 tablespoon olive oil
  • 1 teaspoon paprika
  • 1 teaspoon garlic powder
  • 1 teaspoon dried thyme
  • ½ teaspoon dried rosemary
  • 1 teaspoon salt
  • ½ teaspoon black pepper
  • 1 cup chicken broth
  • 2 tablespoons Worcestershire sauce
  • 1 medium onion sliced
  • 2 cloves garlic minced
  • 2 tablespoons cornstarch optional, for thickening gravy
  • 2 tablespoons cold water optional, for thickening gravy
  • Fresh parsley for garnish

Method
 

  1. In a small bowl, combine paprika, garlic powder, dried thyme, dried rosemary, salt, and black pepper. Mix well to create your seasoning blend.
  2. Pat the pork chops dry with paper towels. This helps the seasoning stick and improves browning if you choose to sear them.
  3. Rub the seasoning mixture generously on both sides of each pork chop, pressing slightly to adhere.
  4. Optional but recommended: Heat olive oil in a large skillet over medium-high heat. Sear the seasoned pork chops for 2-3 minutes per side until golden brown. This step adds flavor but can be skipped if you're short on time.
  5. Place sliced onions and minced garlic in the bottom of your slow cooker.
  6. Arrange the seasoned pork chops (seared or not) on top of the onions.
  7. In a measuring cup, combine chicken broth and Worcestershire sauce, then pour around (not over) the pork chops to preserve the seasoning.
  8. Cover and cook on LOW for 4 hours or on HIGH for 2 hours. The pork chops should reach an internal temperature of 145°F (63°C) and be tender enough to cut with a fork.
  9. Carefully remove the pork chops and place them on a serving platter. Cover loosely with foil to keep warm.
  10. Optional gravy step: In a small bowl, whisk together cornstarch and cold water. Transfer the liquid from the slow cooker to a saucepan, bring to a simmer, then whisk in the cornstarch mixture. Cook for 2-3 minutes until thickened.
  11. Serve the pork chops with the cooked onions and gravy, garnished with fresh parsley.
