Ingredients
  

  • 3 ripe bananas mashed
  • 1 cup white sugar
  • 2 large eggs beaten
  • ½ cup unsalted butter melted
  • 1 teaspoon vanilla extract
  • 1 teaspoon baking soda
  • ¼ teaspoon salt
  • cups all-purpose flour
  • ½ teaspoon ground cinnamon optional

Method
 

  1. Preheat your oven to 350°F (175°C). Grease and flour a 9×5-inch loaf pan.
  2. In a large bowl, mash the ripe bananas until smooth. Stir in the melted butter.
  3. Add the beaten eggs, sugar, and vanilla extract; mix until combined.
  4. Sprinkle the baking soda, salt, and cinnamon over the wet ingredients and stir gently.
  5. Fold in the flour, mixing just until no streaks of flour remain—avoid overmixing for a tender crumb.
  6. Pour the batter into the prepared loaf pan and smooth the top with a spatula.
  7. Bake in the preheated oven for 60 minutes, or until a toothpick inserted in the center comes out clean.
  8. Let the loaf cool in the pan for 10 minutes, then transfer to a wire rack to cool completely before slicing.
