  • 4 boneless skinless chicken breasts (about 2 pounds)
  • 1/2 cup cider vinegar
  • 3 tablespoons Dijon mustard
  • 3 cloves garlic minced
  • 1 tablespoon lime juice
  • 1 tablespoon lemon juice
  • 1/3 cup brown sugar packed
  • 1 1/2 teaspoons salt
  • 1/2 teaspoon freshly ground black pepper
  • 1/4 cup olive oil

Method
 

  1. In a large glass or ceramic bowl, combine cider vinegar, Dijon mustard, minced garlic, lime juice, lemon juice, brown sugar, salt, and pepper. Whisk thoroughly until the sugar dissolves.
  2. Slowly whisk in the olive oil until the marinade is well emulsified.
