  • 1/2 cup unsalted butter softened
  • 1 1/2 cups unsweetened applesauce
  • 2 large eggs
  • 1 cup raisins
  • 1/2 cup chopped walnuts
  • 1 teaspoon vanilla extract

Method
 

  1. Preheat your oven to 350°F (175°C). Thoroughly grease and flour an 8-inch cake pan to prevent sticking.
  2. In a medium bowl, whisk together the flour, baking soda, salt, cinnamon, and cloves until well combined.
  3. In a large mixing bowl, cream together the butter and sugar until light and fluffy, about 3-4 minutes on medium speed.
  4. Add the eggs one at a time, beating well after each addition. Mix in the vanilla extract.
  5. Gradually add the flour mixture to the butter mixture, alternating with the applesauce. Begin and end with the flour mixture, mixing just until combined after each addition.
  6. Gently fold in the raisins and chopped walnuts with a rubber spatula.
  7. Pour the batter into the prepared cake pan, spreading it evenly.
  8. Bake for 35-40 minutes, or until a toothpick inserted into the center comes out clean or with a few moist crumbs.
