  • 7 large English cucumbers grated
  • 2 medium onions grated
  • 2 tablespoons pickling salt
  • 1 teaspoon ground turmeric
  • 1 teaspoon ground ginger
  • ½ teaspoon celery seeds

Method
 

  1. Using the large holes of a box grater, grate cucumbers and onions directly into a roomy bowl.
  2. Sprinkle pickling salt over the grated veggies and toss gently to combine the flavors.
  3. Stir in ground turmeric, ginger, and celery seeds—this blend unlocks that signature sweet-tangy crunch.
  4. Cover the bowl tightly with plastic wrap or a lid. Let it rest at room temperature for 8 hours to overnight.
  5. Drain off excess liquid, transfer your relish to sterilized jars, and refrigerate for up to 2 weeks.
