The Denver Omelet

This Denver omelet is Chef John's version of beaten eggs firmly cooked and filled with green bell pepper, smoked ham, onions, and Cheddar cheese.

Ingredients
  

  • 3 large eggs
  • 2 tablespoons milk or water optional for extra fluffiness
  • 1/4 cup diced green bell pepper
  • 1/4 cup diced onion
  • 1/4 cup smoked ham chopped
  • 1/2 cup shredded Cheddar cheese
  • 1 tablespoon butter or oil
  • Salt and pepper to taste

Method
 

  1. Crack the eggs into a bowl, add milk or water, season with salt and pepper, and whisk until frothy.
  2. Heat a nonstick skillet over medium heat and melt butter to coat the pan.
  3. Sauté bell pepper and onion for 2–3 minutes until tender.
  4. Add the chopped ham and cook for another minute to warm through.
  5. Pour the egg mixture into the skillet, tilt to spread evenly, and let set for 1–2 minutes.
  6. Sprinkle shredded Cheddar cheese on one half of the omelet.
  7. When eggs are nearly set, fold the omelet in half and cook for 30 seconds more.
  8. Slide onto a plate, garnish with fresh herbs if desired, and enjoy!
