- Crack the eggs into a bowl, add milk or water, season with salt and pepper, and whisk until frothy.
- Heat a nonstick skillet over medium heat and melt butter to coat the pan.
- Sauté bell pepper and onion for 2–3 minutes until tender.
- Add the chopped ham and cook for another minute to warm through.
- Pour the egg mixture into the skillet, tilt to spread evenly, and let set for 1–2 minutes.
- Sprinkle shredded Cheddar cheese on one half of the omelet.
- When eggs are nearly set, fold the omelet in half and cook for 30 seconds more.
- Slide onto a plate, garnish with fresh herbs if desired, and enjoy!
