Method
- In a large bowl, whisk together the flour, sugar, baking powder, and salt.
- In a separate bowl or measuring cup, beat the egg, then add milk and oil and mix well.
- Pour the wet ingredients into the dry ingredients and stir just until combined. (A few small lumps are okay - overmixing will make tough pancakes!)
- Let the batter rest for 5 minutes while you heat a lightly oiled griddle or frying pan over medium-high heat.
- Pour or scoop the batter onto the hot griddle, using approximately 1/4 cup for each pancake.
- Cook until bubbles form on the surface and the edges look dry, about 2-3 minutes.
- Flip with a spatula and cook until golden brown on the other side, about 1-2 minutes more.
- Serve hot with your favorite toppings.
