Ingredients
  

  • 1 cup all-purpose flour
  • 2 tablespoons white sugar
  • 2 teaspoons baking powder
  • 1/2 teaspoon salt
  • 1 cup milk
  • 2 tablespoons vegetable oil
  • 1 large egg
  • Optional: 1/2 teaspoon vanilla extract

Method
 

  1. In a large bowl, whisk together the flour, sugar, baking powder, and salt.
  2. In a separate bowl or measuring cup, beat the egg, then add milk and oil and mix well.
  3. Pour the wet ingredients into the dry ingredients and stir just until combined. (A few small lumps are okay - overmixing will make tough pancakes!)
  4. Let the batter rest for 5 minutes while you heat a lightly oiled griddle or frying pan over medium-high heat.
  5. Pour or scoop the batter onto the hot griddle, using approximately 1/4 cup for each pancake.
  6. Cook until bubbles form on the surface and the edges look dry, about 2-3 minutes.
  7. Flip with a spatula and cook until golden brown on the other side, about 1-2 minutes more.
  8. Serve hot with your favorite toppings.
