Ingredients
  

  • 2 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1/2 cup unsalted butter softened
  • 1 cup granulated sugar
  • 2 large eggs beaten
  • 3-4 very ripe bananas mashed (about 1 1/2 cups)
  • 1/2 cup buttermilk
  • 1 teaspoon vanilla extract
  • 1 cup chopped walnuts or pecans optional

Method
 

  1. Preheat your oven to 325°F (165°C). Grease a 9x5-inch loaf pan with butter or cooking spray.
  2. In a medium bowl, whisk together the flour, baking soda, and salt. Set aside.
  3. In a large mixing bowl, cream together the softened butter and sugar until light and fluffy, about 3 minutes.
  4. Add the beaten eggs to the butter mixture and mix well.
  5. Stir in the mashed bananas, buttermilk, and vanilla extract until combined.
  6. Gradually add the dry ingredients to the wet ingredients, stirring just until moistened. Be careful not to overmix!
  7. If using nuts, fold them in gently.
  8. Pour the batter into the prepared loaf pan and smooth the top.
  9. Bake in the preheated oven for 70-80 minutes, or until a toothpick inserted into the center comes out clean.
  10. Let the bread cool in the pan for 10 minutes, then remove and cool completely on a wire rack before slicing.
