Method
- Gather all ingredients and preheat the oven to 325°F (165°C). Line a 9x13 inch baking pan with parchment paper or aluminum foil, leaving some overhang for easy removal.
- Spread the rolled oats on a large baking sheet and toast in the preheated oven for about 10 minutes, stirring occasionally, until lightly golden.
- While oats are toasting, melt butter in a large saucepan over medium heat. Add honey and brown sugar, stirring until the mixture comes to a gentle boil. Reduce heat and simmer for 2 minutes, stirring constantly.
- Remove from heat and stir in vanilla extract and salt.
- Add the toasted oats to the butter mixture, stirring until thoroughly coated.
- Let the mixture cool for about 5 minutes before adding chocolate chips, nuts, seeds, and dried fruits. Stir until all ingredients are well incorporated.
- Transfer the mixture to the prepared baking pan, pressing firmly and evenly using the back of a greased spatula or your hands.
- Bake for 18-20 minutes or until the edges begin to brown slightly.
- Allow the granola mixture to cool completely in the pan (at least 2 hours or overnight) before cutting into bars.
- Cut into 18 bars and store in an airtight container, with parchment paper between layers to prevent sticking.
