  • 2 eggs
  • 3-4 very ripe bananas mashed
  • ½ cup sour cream
  • 1 teaspoon vanilla extract
  • 2 cups all-purpose flour
  • 1 teaspoon baking soda
  • ¼ teaspoon salt
  • ½ cup chopped walnuts optional

Method
 

  1. Gather all ingredients and allow butter, eggs, and sour cream to come to room temperature.
  2. Preheat the oven to 350°F (175°C). Grease a 9x5-inch loaf pan with butter or cooking spray.
  3. In a large bowl, cream together sugar and softened butter until light and fluffy, about 2-3 minutes.
  4. Beat in eggs one at a time, mixing well after each addition.
  5. Stir in mashed bananas, sour cream, and vanilla until well combined.
  6. In a separate bowl, whisk together flour, baking soda, and salt.
  7. Gradually add the dry ingredients to the wet ingredients, stirring just until combined. Do not overmix.
  8. If using, fold in chopped walnuts.
  9. Pour batter into the prepared loaf pan, smoothing the top with a spatula.
  10. Bake in the preheated oven for 60-70 minutes, or until a toothpick inserted in the center comes out clean.
