  • 1 large ripe pineapple peeled, cored and cut into 1/2-inch rings
  • 1 cup packed brown sugar
  • 2 teaspoons ground cinnamon
  • 1/4 teaspoon ground cloves optional, for extra warmth
  • Cooking spray or neutral oil for grilling
  • Fresh mint leaves for garnish optional

Method
 

  1. Preheat your outdoor grill to medium-high heat (about 400°F/205°C). Lightly oil the grates using cooking spray or a paper towel dipped in oil.
  2. In a shallow dish, thoroughly mix the brown sugar and cinnamon (and cloves if using) until well combined.
  3. Pat the pineapple rings dry with paper towels. This helps the sugar mixture stick better and prevents steaming.
  4. Press each pineapple ring into the sugar mixture, coating both sides generously. The moisture from the pineapple will help the sugar adhere.
  5. Place the coated pineapple rings directly on the preheated grill. Cook for 3-4 minutes per side, until beautiful grill marks form and the sugar caramelizes to a golden brown.
  6. Use tongs to carefully flip each piece once. The sugar will be hot and can burn easily, so monitor closely.
  7. Remove from the grill when caramelized on both sides but still firm enough to hold its shape.
  8. Allow to cool for 1-2 minutes before serving. Garnish with fresh mint if desired.
