- Heat the olive oil in a large Dutch oven over medium heat.
- Add the chopped onion and minced garlic; sauté until translucent and fragrant, about 5 minutes.
- Increase heat to medium-high and add the ground beef. Brown the meat, breaking it apart with a spoon, about 8–10 minutes. Season with salt and pepper.
- Stir in chili powder, cumin, smoked paprika, and oregano. Cook for 1–2 minutes to toast the spices.
- Pour in diced tomatoes and green chile peppers. Stir to combine.
- Add kidney beans and beef broth. Bring mixture to a gentle boil.
- Reduce heat to low, cover, and let simmer for at least 4 hours, stirring occasionally.
- Taste and adjust seasoning. Serve hot with your favorite garnishes.
