Method
- Preheat your oven to 350°F (175°C) and lightly grease a 9x13 inch baking dish.
- In a large bowl, combine the cream of chicken soup, sour cream, and milk. Mix until smooth.
- Stir in the shredded chicken, mixed vegetables, garlic powder, onion powder, thyme, salt, and pepper.
- Fold in 3/4 cup of the shredded cheese, saving the rest for topping.
- Pour the mixture into the prepared baking dish and spread evenly.
- In a separate bowl, combine the crushed crackers and melted butter, mixing until the crackers are evenly coated.
- Sprinkle the remaining cheese over the chicken mixture, then top with the buttered cracker mixture.
- Bake uncovered for 30-35 minutes, until the topping is golden brown and the filling is bubbling around the edges.
- Allow to rest for 5-10 minutes before serving to let the casserole set up.
