Ingredients
  

  • 2 cups cooked chicken shredded or cubed
  • 1 10.5 oz can condensed cream of chicken soup
  • 1 cup sour cream
  • 1/2 cup milk
  • 2 cups mixed vegetables frozen peas, carrots, corn
  • 1 cup shredded cheddar cheese
  • 1 sleeve buttery round crackers such as Ritz®, crushed
  • 1/4 cup butter melted
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1/2 teaspoon dried thyme
  • Salt and pepper to taste

Method
 

  1. Preheat your oven to 350°F (175°C) and lightly grease a 9x13 inch baking dish.
  2. In a large bowl, combine the cream of chicken soup, sour cream, and milk. Mix until smooth.
  3. Stir in the shredded chicken, mixed vegetables, garlic powder, onion powder, thyme, salt, and pepper.
  4. Fold in 3/4 cup of the shredded cheese, saving the rest for topping.
  5. Pour the mixture into the prepared baking dish and spread evenly.
  6. In a separate bowl, combine the crushed crackers and melted butter, mixing until the crackers are evenly coated.
  7. Sprinkle the remaining cheese over the chicken mixture, then top with the buttered cracker mixture.
  8. Bake uncovered for 30-35 minutes, until the topping is golden brown and the filling is bubbling around the edges.
  9. Allow to rest for 5-10 minutes before serving to let the casserole set up.
