Ingredients
  

  • 2 tablespoons unsalted butter
  • 1 large onion finely chopped
  • 2 cloves garlic minced
  • 4 cups broccoli florets fresh and trimmed
  • 1 medium potato peeled and diced
  • 4 cups vegetable broth gluten-free, if needed
  • 1 cup heavy cream
  • 1 teaspoon fine salt plus more to taste
  • 1/2 teaspoon freshly ground black pepper
  • 1/4 teaspoon ground nutmeg optional
  • Chopped parsley or chives for garnish (optional)

Method
 

  1. Trim broccoli into small florets; peel and dice potato. Finely chop onion and mince garlic. Gather broth, cream, and seasonings.
  2. Melt butter in a heavy-bottomed pot over medium heat. Sauté onion until translucent, about 5 minutes. Stir in garlic and cook 1 minute, avoiding browning.
  3. Add broccoli florets and diced potato; stir to coat with butter and aromatics. Cook 3–4 minutes until broccoli brightens.
  4. Pour in vegetable broth to submerge vegetables. Bring to a gentle simmer, cover, and cook 15–20 minutes until potatoes are fork-tender.
  5. Remove from heat and cool slightly. Blend with an immersion blender until silky (or carefully blend in batches in a countertop blender).
  6. Return pot to low heat. Stir in heavy cream; season with salt, pepper, and nutmeg (if using). Do not boil after adding cream.
  7. Taste and adjust seasoning. For gentle heat, add a pinch of cayenne. Warm through over low heat.
  8. Ladle into bowls. Garnish with chopped parsley or chives and an optional swirl of cream. Serve with crusty bread or a salad.
