- Trim broccoli into small florets; peel and dice potato. Finely chop onion and mince garlic. Gather broth, cream, and seasonings.
- Melt butter in a heavy-bottomed pot over medium heat. Sauté onion until translucent, about 5 minutes. Stir in garlic and cook 1 minute, avoiding browning.
- Add broccoli florets and diced potato; stir to coat with butter and aromatics. Cook 3–4 minutes until broccoli brightens.
- Pour in vegetable broth to submerge vegetables. Bring to a gentle simmer, cover, and cook 15–20 minutes until potatoes are fork-tender.
- Remove from heat and cool slightly. Blend with an immersion blender until silky (or carefully blend in batches in a countertop blender).
- Return pot to low heat. Stir in heavy cream; season with salt, pepper, and nutmeg (if using). Do not boil after adding cream.
- Taste and adjust seasoning. For gentle heat, add a pinch of cayenne. Warm through over low heat.
- Ladle into bowls. Garnish with chopped parsley or chives and an optional swirl of cream. Serve with crusty bread or a salad.
