  • 2 slices of whole grain bread
  • 1 ripe avocado
  • 2 large eggs
  • 2 teaspoons butter divided
  • 1/2 lemon juiced
  • 1/4 teaspoon red pepper flakes optional
  • Salt and freshly ground black pepper to taste
  • 1 tablespoon fresh chopped chives or microgreens for garnish

Method
 

  1. Toast your bread slices until golden brown and crispy.
  2. While bread is toasting, cut the avocado in half, remove the pit, and scoop the flesh into a small bowl.
  3. Add lemon juice, salt, and pepper to the avocado. Mash with a fork until desired consistency is reached - some prefer it chunky, others smooth.
  4. Melt 1 teaspoon butter in a skillet over medium-low heat.
  5. Crack eggs into the skillet side by side and cook until whites are set on the bottom and firm enough to flip, about 2-3 minutes.
  6. Carefully flip eggs, trying not to break the yolks, and cook until they reach your desired doneness - 2 minutes for runny yolks, 5 minutes for fully set.
  7. Spread the mashed avocado mixture evenly over each piece of toast.
  8. Top each toast with a fried egg.
  9. Sprinkle with red pepper flakes if desired and garnish with fresh chives or microgreens.
