  • 1 14 ounce can sweetened condensed milk
  • ½ cup key lime juice fresh is best, but bottled works well too
  • 1 9 inch prepared graham cracker crust
  • Optional for garnish: whipped cream and lime zest

Method
 

  1. Preheat your oven to 375°F (190°C). This ensures your pie bakes evenly.
  2. In a medium bowl, whisk together the beaten egg yolks and sweetened condensed milk until well combined.
  3. Gradually add the key lime juice, stirring continuously. Watch as the mixture thickens slightly due to the acidity of the lime juice.
  4. Pour the filling into your prepared graham cracker crust, spreading it evenly.
  5. Bake in the preheated oven for 15 minutes. The pie is done when the edges are set but the center still has a slight jiggle.
