- Preheat your oven to 350°F (175°C). Lightly grease an 8x4 inch loaf pan.
- In a large mixing bowl, cream together ¼ cup of the softened butter and sugar until light and fluffy.
- Add eggs one at a time, beating well after each addition.
- Stir in the mashed bananas and vanilla extract until well combined.
- In a separate bowl, whisk together the flour, baking soda, and salt.
- Gradually fold the dry ingredients into the wet mixture, being careful not to overmix.
- If using, fold in chopped walnuts.
- Melt the remaining ¼ cup butter and pour it into your prepared loaf pan, tilting to coat the bottom.
- Pour the batter into the prepared pan and smooth the top with a spatula.
- Bake for 55-60 minutes, or until a toothpick inserted into the center comes out clean or with a few moist crumbs.
- Allow the bread to cool in the pan for about 10 minutes before transferring to a wire rack to cool completely.
