Ingredients
  

  • 2-3 very ripe bananas mashed
  • ½ cup butter softened (divided)
  • 1 cup granulated sugar
  • 2 large eggs room temperature
  • cups all-purpose flour
  • 1 teaspoon baking soda
  • ½ teaspoon salt
  • 1 teaspoon vanilla extract
  • ¼ cup chopped walnuts optional

Method
 

  1. Preheat your oven to 350°F (175°C). Lightly grease an 8x4 inch loaf pan.
  2. In a large mixing bowl, cream together ¼ cup of the softened butter and sugar until light and fluffy.
  3. Add eggs one at a time, beating well after each addition.
  4. Stir in the mashed bananas and vanilla extract until well combined.
  5. In a separate bowl, whisk together the flour, baking soda, and salt.
  6. Gradually fold the dry ingredients into the wet mixture, being careful not to overmix.
  7. If using, fold in chopped walnuts.
  8. Melt the remaining ¼ cup butter and pour it into your prepared loaf pan, tilting to coat the bottom.
  9. Pour the batter into the prepared pan and smooth the top with a spatula.
  10. Bake for 55-60 minutes, or until a toothpick inserted into the center comes out clean or with a few moist crumbs.
  11. Allow the bread to cool in the pan for about 10 minutes before transferring to a wire rack to cool completely.
