  • 2 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 cup 2 sticks unsalted butter, softened
  • 2 cups granulated sugar
  • 4 large eggs at room temperature
  • 5-6 very ripe bananas mashed (about 2 cups)
  • 1 tablespoon pure vanilla extract
  • 1 1/2 cups chopped walnuts
  • Optional: 1/2 teaspoon cinnamon for extra warmth

Method
 

  1. Preheat the oven to 350°F (175°C). Generously grease and flour two 9x5-inch loaf pans to ensure easy removal after baking.
  2. In a medium bowl, whisk together the flour, baking soda, and salt. Set aside.
  3. In a large mixing bowl, beat the softened butter and sugar until light and fluffy, about 3-4 minutes.
  4. Beat in the eggs one at a time, mixing well after each addition.
  5. Mix in the mashed bananas and vanilla extract until well combined.
  6. Gradually fold the dry ingredients into the wet ingredients, mixing just until combined.
  7. Fold in the chopped walnuts, saving a handful to sprinkle on top if desired.
  8. Divide the batter evenly between the prepared loaf pans, smoothing the tops with a spatula.
  9. Bake for about 1 hour to 1 hour and 15 minutes, or until a toothpick inserted into the center comes out clean with just a few moist crumbs.
  10. Allow the loaves to cool in the pans for 15-20 minutes, then remove from pans and transfer to a wire rack to cool completely before slicing.
