- Preheat the oven to 350°F (175°C). Generously grease and flour two 9x5-inch loaf pans to ensure easy removal after baking.
- In a medium bowl, whisk together the flour, baking soda, and salt. Set aside.
- In a large mixing bowl, beat the softened butter and sugar until light and fluffy, about 3-4 minutes.
- Beat in the eggs one at a time, mixing well after each addition.
- Mix in the mashed bananas and vanilla extract until well combined.
- Gradually fold the dry ingredients into the wet ingredients, mixing just until combined.
- Fold in the chopped walnuts, saving a handful to sprinkle on top if desired.
- Divide the batter evenly between the prepared loaf pans, smoothing the tops with a spatula.
- Bake for about 1 hour to 1 hour and 15 minutes, or until a toothpick inserted into the center comes out clean with just a few moist crumbs.
- Allow the loaves to cool in the pans for 15-20 minutes, then remove from pans and transfer to a wire rack to cool completely before slicing.
