Ingredients
  

  • 8 medium cucumbers chopped
  • 1 medium onion chopped
  • 2 bell peppers any color, chopped
  • 2 tablespoons pickling salt
  • Cold water enough to cover the vegetables

Method
 

  1. Combine cucumbers, onions, and bell peppers in a large bowl.
  2. Add pickling salt, then pour in enough cold water to cover the vegetables.
  3. Let soak for 2 hours, stirring every 30 minutes to ensure even brining.
  4. Thoroughly drain in a colander and pat the vegetables dry.
  5. Transfer the chunky relish to sterilized jars and refrigerate for at least 12 hours before serving.
