Ingredients
  

  • ¼ cup Worcestershire sauce
  • ¼ cup soy sauce low sodium works well
  • 3 tablespoons fresh lime juice about 1-2 limes
  • 2 tablespoons finely minced onion
  • 1 teaspoon red pepper flakes
  • 1 teaspoon dry mustard powder
  • 1 teaspoon salt kosher preferred
  • 1 teaspoon dried thyme
  • ½ teaspoon freshly ground black pepper
  • 2 cloves garlic minced
  • ½ teaspoon hot sauce adjust to taste
  • 1-2 lbs venison steaks preferably backstrap or loin cuts

Method
 

  1. In a medium bowl, whisk together the Worcestershire sauce, soy sauce, and lime juice until well combined.
  2. Add the minced onion, red pepper flakes, dry mustard, salt, thyme, black pepper, garlic, and hot sauce. Whisk thoroughly to combine all ingredients.
  3. Pour the marinade into a resealable plastic bag or shallow glass dish.
  4. Add the venison steaks to the marinade, ensuring they're completely coated on all sides.
  5. If using a plastic bag, squeeze out excess air before sealing to maximize contact between the marinade and meat.
  6. Place in the refrigerator and marinate for at least 1 hour. For optimal results, marinate for 4-8 hours or overnight.
  7. When ready to cook, remove venison from the marinade and pat dry with paper towels.
  8. Discard the used marinade.
