- In a medium bowl, whisk together the Worcestershire sauce, soy sauce, and lime juice until well combined.
- Add the minced onion, red pepper flakes, dry mustard, salt, thyme, black pepper, garlic, and hot sauce. Whisk thoroughly to combine all ingredients.
- Pour the marinade into a resealable plastic bag or shallow glass dish.
- Add the venison steaks to the marinade, ensuring they're completely coated on all sides.
- If using a plastic bag, squeeze out excess air before sealing to maximize contact between the marinade and meat.
- Place in the refrigerator and marinate for at least 1 hour. For optimal results, marinate for 4-8 hours or overnight.
- When ready to cook, remove venison from the marinade and pat dry with paper towels.
- Discard the used marinade.
