Ingredients
  

  • 1 cup yellow cornmeal
  • 1 cup all-purpose flour
  • 1 tablespoon baking powder
  • 1 teaspoon salt
  • 1 tablespoon sugar
  • 1/2 teaspoon black pepper
  • 1 cup buttermilk
  • 1 large egg beaten
  • 1/2 cup diced yellow onion
  • Oil for deep-frying as needed

Method
 

  1. Heat oil in a deep fryer or heavy-bottomed pot to 350°F (175°C).
  2. In a mixing bowl, whisk together cornmeal, flour, baking powder, salt, sugar, and pepper.
  3. Stir in buttermilk, beaten egg, and diced onion until just combined.
  4. Drop heaping tablespoons of batter into hot oil, frying in batches to avoid overcrowding.
  5. Cook hush puppies for 2–3 minutes, turning occasionally, until golden brown and crispy.
  6. Using a slotted spoon, transfer to a paper towel-lined plate to drain excess oil.
  7. Serve hot with your favorite remoulade or tangy dipping sauce.
