- Heat oil in a deep fryer or heavy-bottomed pot to 350°F (175°C).
- In a mixing bowl, whisk together cornmeal, flour, baking powder, salt, sugar, and pepper.
- Stir in buttermilk, beaten egg, and diced onion until just combined.
- Drop heaping tablespoons of batter into hot oil, frying in batches to avoid overcrowding.
- Cook hush puppies for 2–3 minutes, turning occasionally, until golden brown and crispy.
- Using a slotted spoon, transfer to a paper towel-lined plate to drain excess oil.
- Serve hot with your favorite remoulade or tangy dipping sauce.
