White Sauce for Pasta

Ingredients
  

  • 2 tablespoons unsalted butter
  • 2 tablespoons all-purpose flour
  • 2 cups low-fat milk warmed
  • 1/4 teaspoon kosher salt
  • 1/8 teaspoon freshly ground black pepper
  • Pinch of freshly grated nutmeg optional

Method
 

  1. In a medium saucepan over medium heat, melt the butter until foamy.
  2. Whisk in the flour and cook for about 1 minute—this creates the roux.
  3. Slowly pour in the warm milk, whisking constantly to avoid lumps.
  4. Continue to whisk for 3–5 minutes, until the sauce thickens and coats the back of a spoon.
  5. Season with salt, pepper, and a pinch of nutmeg; stir to combine.
  6. Remove from heat and let rest 1–2 minutes before tossing with your favorite pasta.
