Ingredients
  

  • 1 lb peeled and deveined shrimp
  • 2 cups broccoli florets
  • 1 cup sugar snap peas
  • 1 red bell pepper thinly sliced
  • ½ cup shredded carrots
  • 3 cloves garlic finely minced
  • ¼ cup low-sodium soy sauce
  • ½ cup chicken broth
  • 2 tbsp brown sugar
  • 1 tsp sesame oil
  • 1 tbsp cornstarch
  • 1 tbsp vegetable oil
  • Sliced green onions for garnish

Method
 

  1. Toss shrimp in half of the minced garlic and a pinch of salt; let it rest while you prep the veggies.
  2. In a small bowl, whisk together soy sauce, chicken broth, brown sugar, sesame oil, cornstarch, and remaining garlic until smooth.
  3. Heat oil in a large wok or skillet over high heat. Add broccoli and stir-fry for 2 minutes.
  4. Add snap peas and carrots; cook for another minute, keeping the veggies crisp-tender.
  5. Push vegetables aside, add shrimp, and sear 1–2 minutes per side until just pink.
  6. Pour the garlic-soy mixture into the center; toss everything for 2 more minutes until the sauce is glossy and coats all ingredients.
  7. Remove from heat, sprinkle with green onions, and serve over rice or noodles.
