Ingredients
  

  • 1 pound frozen skinless boneless chicken breast halves
  • 2 tablespoons taco seasoning
  • 1 cup chunky salsa mild, medium, or hot based on preference
  • ½ cup chicken broth
  • Optional: 1 tablespoon fresh lime juice
  • Optional garnishes: chopped cilantro sliced avocado, lime wedges

Method
 

  1. Place frozen chicken breast halves in the bottom of your Instant Pot.
  2. Sprinkle all sides of the chicken generously with taco seasoning, making sure to coat evenly.
  3. Pour the salsa over the seasoned chicken breasts, distributing evenly.
  4. Add chicken broth around the sides (not directly on top of the seasoning).
  5. Close and seal the Instant Pot lid, ensuring the valve is set to 'sealing' position.
  6. Set to pressure cook on HIGH for 15 minutes (for frozen chicken) or 10 minutes (if using thawed).
  7. When the cooking cycle completes, allow natural pressure release for 10 minutes.
  8. Carefully perform a quick release for any remaining pressure.
  9. Remove the chicken breasts and shred with two forks.
  10. Return the shredded chicken to the pot and mix with the remaining sauce.
  11. If desired, stir in fresh lime juice for extra brightness.
  12. Set the Instant Pot to sauté mode for 2-3 minutes if you prefer a thicker sauce.
