Ingredients
- 2 plain bagels, split
- 2 tablespoons unsalted butter, softened
- 4 large eggs
- 2 tablespoons whole milk
- Salt and pepper, to taste
- 4 slices American cheese
- 4 strips thick-cut bacon, cooked until crispy (or 6 oz. thinly sliced steak, pan-seared and seasoned)
- For the sauce:
- 3 tablespoons mayonnaise
- 1 tablespoon Dijon mustard
- 1 teaspoon lemon juice
- 1 teaspoon honey
- Pinch of cayenne pepper
Directions
- Make the sauce: whisk mayonnaise, mustard, lemon juice, honey, and cayenne in a bowl; chill.
- Toast bagels: butter cut sides, arrange on a sheet pan, and broil until golden (1–2 minutes).
- Cook eggs: beat eggs with milk, salt, and pepper. In a buttered nonstick pan over medium-low, pour in eggs, let set, then fold gently to form a round omelet.
- Assemble: on each bagel bottom, layer cheese, folded egg, bacon or steak, another cheese slice, and a dollop of sauce. Top with bagel lid.
- Wrap in parchment or serve open-faced. Enjoy while warm.
