Caramel-Swirled M&M Cookie Bars
These gooey, colorful cookie bars feature a tender vanilla dough laced with melty mini M&M’s and a dreamy caramel swirl. With a slight chill in the bowl and a quick bake in a rimmed baking sheet, they’re faster than drop cookies yet just as irresistible. Perfect for parties, lunchboxes or a midday sugar boost!
Ingredients
- 1 cup (2 sticks) unsalted butter, softened
- ¾ cup granulated sugar
- ¾ cup light brown sugar, packed
- 2 large eggs, at room temperature
- 2 teaspoons pure vanilla extract
- 2¼ cups all-purpose flour
- 1 teaspoon baking soda
- ½ teaspoon fine sea salt
- 1½ cups mini M&M’s candies
- ½ cup good-quality caramel sauce (homemade or store-bought)
Instructions
- Preheat the oven to 350°F (175°C). Line a 9×13-inch baking pan with parchment paper, leaving an overhang for easy removal.
- In a large bowl, beat the softened butter, granulated sugar, and brown sugar together on medium speed until light and fluffy, about 3 minutes.
- Add eggs one at a time, beating well after each addition. Stir in vanilla extract until combined.
- In a separate bowl, whisk flour, baking soda, and salt. Gradually add the dry ingredients to the butter mixture, mixing on low until just incorporated.
- Fold in 1 cup of the mini M&M’s with a silicone spatula, reserving the rest for the top.
- Transfer half the dough to the prepared pan and press gently into an even layer. Drizzle half the caramel sauce in zigzags over the dough. Spread the remaining dough on top, then finish with the rest of the caramel. Use a knife to swirl the layers together. Sprinkle the remaining mini M&M’s over the surface.
- Bake until the top is golden and a toothpick inserted into the center comes out with a few moist crumbs, about 20–22 minutes. Cool completely in the pan on a wire rack, then lift out the parchment and slice into bars.
