Zesty Grilled Chicken Skewers

  • 1½ pounds boneless, skinless chicken breast, cut into 1″ cubes

  • Zest and juice of 1 large lemon (about 3 tablespoons juice)

  • 1 tablespoon dried oregano
  • 1 teaspoon smoked paprika
  • ½ teaspoon kosher salt
  • ¼ teaspoon freshly ground black pepper
  • 2 tablespoons chopped fresh parsley, for garnish

Instructions

  1. In a bowl, whisk together olive oil, lemon juice, lemon zest, garlic, oregano, paprika, salt, and pepper.
  2. Toss the chicken pieces in marinade, cover, and let rest at room temperature for 30 minutes (or refrigerate up to 2 hours).
  3. Meanwhile, soak six wooden skewers in water for 20 minutes to prevent burning.
  4. Thread chicken cubes evenly onto skewers, leaving a little space between each piece.
  5. Preheat grill to medium-high heat (about 400°F). Oil grates lightly.
