Ingredients

  • 18 ounces ground chicken
  • 1 large egg lightly beaten
  • 1/4 cup plain breadcrumbs
  • 1 tablespoon fresh parsley finely chopped
  • 1 teaspoon garlic powder
  • 1/2 teaspoon onion powder
  • 1/2 teaspoon smoked paprika
  • 1/2 teaspoon kosher salt
  • 1/4 teaspoon black pepper
  • 2 tablespoons olive oil

Method

  1. In a large bowl, combine ground chicken, egg, breadcrumbs, parsley, garlic powder, onion powder, smoked paprika, salt, and pepper. Gently mix until just combined—overmixing can make patties tough.
  2. Divide the mixture into six equal portions. With lightly oiled hands, shape each portion into a ¾-inch-thick patty. Pro tip: press a small dimple in the center to prevent puffing up.
  3. Heat a nonstick skillet over medium-high heat. Add olive oil and let it shimmer.
  4. Place the patties in the skillet. Cook for 4–5 minutes on each side, until the exterior is golden brown and the internal temperature reaches 165°F.
  5. Transfer cooked patties to a plate lined with paper towels to absorb any excess oil.
  6. Serve on toasted buns, atop a crisp salad, or alongside roasted veggies for a well-rounded, family-friendly dinner.
