- In a large bowl, combine ground chicken, egg, breadcrumbs, parsley, garlic powder, onion powder, smoked paprika, salt, and pepper. Gently mix until just combined—overmixing can make patties tough.
- Divide the mixture into six equal portions. With lightly oiled hands, shape each portion into a ¾-inch-thick patty. Pro tip: press a small dimple in the center to prevent puffing up.
- Heat a nonstick skillet over medium-high heat. Add olive oil and let it shimmer.
- Place the patties in the skillet. Cook for 4–5 minutes on each side, until the exterior is golden brown and the internal temperature reaches 165°F.
- Transfer cooked patties to a plate lined with paper towels to absorb any excess oil.
