Cast Iron Pan-Seared Steak (Oven-Finished)

Steak is pan-seared in a cast iron skillet and finished in the oven. A quick 45-minute marinade adds extra flavor to your sirloin.

Ingredients
  

  • 2 6 ounce beef top sirloin steaks
  • 1/4 cup olive oil
  • 2 tablespoons soy sauce
  • 2 cloves garlic minced
  • 1 teaspoon Worcestershire sauce
  • 1 teaspoon freshly ground black pepper
  • 1/2 teaspoon kosher salt
  • 1 tablespoon butter
  • Fresh herbs rosemary or thyme, optional

Method
 

  1. In a bowl, whisk olive oil, soy sauce, garlic, Worcestershire sauce, salt, and pepper. Add steaks, cover, and refrigerate for 45 minutes.
  2. Heat oven to 400°F (200°C). Place a cast iron skillet on the stove and set burner to high.
  3. Remove steaks from marinade, pat dry with paper towels to ensure a crisp sear.
  4. Once the skillet is smoking hot, add steaks and sear 2-3 minutes per side until a golden-brown crust forms.
  5. Reduce heat to medium, add butter and herbs. Tilt skillet and spoon melted butter over the steaks for 1 minute.
  6. Transfer skillet to the oven. Cook 5-8 minutes for medium-rare (internal temperature 130°F/54°C).
  7. Remove steaks, let rest on a cutting board for 5 minutes to redistribute juices.
  8. Cut against the grain into thin strips for maximum tenderness.
