Chef John's Perfect Mashed Potatoes

Perfect mashed potatoes made with tender russet potatoes, whole milk, and lots of butter that turn out smooth, fluffy, and lump-free every time!

Ingredients
  

  • 3 large russet potatoes peeled and halved lengthwise
  • 4 tablespoons unsalted butter cut into pieces
  • ½ cup whole milk warmed
  • 1 teaspoon kosher salt plus more for cooking water
  • Freshly ground black pepper to taste

Method
 

  1. Place potatoes in a large pot and cover with cold water by 1 inch. Add a pinch of salt, then bring to a rolling boil over high heat.
  2. Reduce heat to medium-low, cover, and simmer for 20–25 minutes, or until potatoes are fork-tender.
  3. Drain well and return potatoes to the hot pot. Mash with a potato masher until no large lumps remain.
  4. Stir in butter pieces until melted, then gradually pour in warmed milk. Mix until you reach a smooth, fluffy consistency.
  5. Taste and season with additional salt and pepper. Transfer to a serving bowl and garnish with chives or parsley if desired.
