- Place potatoes in a large pot and cover with cold water by 1 inch. Add a pinch of salt, then bring to a rolling boil over high heat.
- Reduce heat to medium-low, cover, and simmer for 20–25 minutes, or until potatoes are fork-tender.
- Drain well and return potatoes to the hot pot. Mash with a potato masher until no large lumps remain.
- Stir in butter pieces until melted, then gradually pour in warmed milk. Mix until you reach a smooth, fluffy consistency.
- Taste and season with additional salt and pepper. Transfer to a serving bowl and garnish with chives or parsley if desired.
