This cobb salad is a protein-packed, classic American salad loaded with crispy bacon, chicken breast, hard-boiled eggs, avocado, tomatoes, and creamy blue cheese, tossed with a tangy vinaigrette.

Ingredients
  

  • 6 slices bacon chopped
  • 3 large eggs
  • 2 boneless skinless chicken breasts (about 10 oz), grilled or pan-seared, sliced
  • 4 cups romaine lettuce chopped
  • 2 cups iceberg lettuce chopped
  • 2 medium tomatoes seeded and diced
  • 1 avocado pitted and sliced
  • 4 oz blue cheese crumbles
  • 2 green onions thinly sliced
  • 1/2 cup red wine vinaigrette
  • Salt and freshly ground black pepper to taste

Method
 

  1. Cook the bacon: In a large skillet over medium heat, cook chopped bacon until crispy, about 6–8 minutes. Drain on paper towels and set aside.
  2. Boil the eggs: Place eggs in a saucepan, cover with cold water, and bring to a boil. Remove from heat, cover, and let sit 10 minutes. Cool in ice water, peel, and chop.
  3. Prepare the chicken: Season chicken breasts with salt and pepper. Grill or sear in a skillet with a drizzle of olive oil for 4–5 minutes per side until cooked through. Let rest, then slice.
  4. Assemble the salad: On a large platter or in a bowl, arrange romaine and iceberg lettuces. Create rows of bacon, eggs, chicken, tomatoes, avocado, blue cheese, and green onions.
  5. Dress and serve: Drizzle red wine vinaigrette over the salad. Season with extra salt and pepper if needed. Toss gently or serve as a composed salad.
