Colombian Arepas

These Colombian arepas made with mozzarella cheese and cornmeal are pan-fried until golden brown. Enjoy them for breakfast or as a side dish at dinner.

Ingredients
  

  • 1 cup warm water
  • 2 cups pre-cooked cornmeal masarepa
  • cups shredded mozzarella cheese
  • 1 tablespoon unsalted butter softened
  • ½ teaspoon salt

Method
 

  1. In a large bowl, mix the warm water, cornmeal, shredded mozzarella, butter, and salt. Knead until a soft, pliable dough forms.
  2. Divide the dough into 6 equal pieces. Form each piece into a ball and place between two sheets of plastic wrap.
  3. Flatten each ball to about ½-inch thickness. Heat a non-stick skillet with butter and cook each arepa for 5–6 minutes per side, until golden brown.
  4. Serve warm, splitting open the arepas and filling with extra cheese or avocado.
