Ingredients

  • 2 medium Granny Smith apples peeled, cored and coarsely shredded
  • 1/2 cup golden raisins
  • 1/4 cup granulated sugar
  • 1/2 teaspoon ground cinnamon
  • 1 tablespoon lemon juice
  • 1 sheet frozen puff pastry thawed
  • 1 egg beaten (for egg wash)
  • 2 tablespoons unsalted butter melted
  • 2 tablespoons turbinado sugar for sprinkling
  • Powdered sugar for dusting (optional)

Method

  1. Preheat the oven to 400°F (200°C). Line a large rimmed baking sheet with parchment paper.
  2. In a medium bowl, combine shredded apples, raisins, sugar, cinnamon, and lemon juice. Toss until evenly coated.
  3. On a lightly floured surface, roll out the puff pastry into a 12×10-inch rectangle. Transfer to the prepared sheet.
  4. Brush melted butter over the center of the pastry, leaving a 1-inch border.
  5. Mound the apple mixture along the length of the pastry.
  6. Fold the short edges over the filling, then roll the pastry into a neat log.
  7. Place the strudel seam-side down. Brush with beaten egg and sprinkle with turbinado sugar.
  8. Bake for 30 minutes, or until golden and puffed. Let cool slightly, dust with powdered sugar, slice and serve warm.
