- Preheat the oven to 400°F (200°C). Line a large rimmed baking sheet with parchment paper.
- In a medium bowl, combine shredded apples, raisins, sugar, cinnamon, and lemon juice. Toss until evenly coated.
- On a lightly floured surface, roll out the puff pastry into a 12×10-inch rectangle. Transfer to the prepared sheet.
- Brush melted butter over the center of the pastry, leaving a 1-inch border.
- Mound the apple mixture along the length of the pastry.
- Fold the short edges over the filling, then roll the pastry into a neat log.
- Place the strudel seam-side down. Brush with beaten egg and sprinkle with turbinado sugar.
- Bake for 30 minutes, or until golden and puffed. Let cool slightly, dust with powdered sugar, slice and serve warm.
