Easy Apple Strudel

Strudel is a beloved German pastry brimming with tender apples, golden raisins, and warm spices wrapped in flaky puff pastry for a truly impressive fall dessert.

Ingredients

For the Apple Filling

  • 2 medium Granny Smith apples, peeled, cored and coarsely shredded
  • 1/2 cup golden raisins
  • 1/4 cup granulated sugar
  • 1/2 teaspoon ground cinnamon
  • 1 tablespoon lemon juice

Pastry & Topping

  • 1 sheet frozen puff pastry, thawed
  • 1 egg, beaten (for egg wash)
  • 2 tablespoons unsalted butter, melted
  • 2 tablespoons turbinado sugar (for sprinkling)
  • Powdered sugar, for dusting (optional)

Instructions

1. Prep & Preheat

  1. Preheat the oven to 400°F (200°C). Line a large rimmed baking sheet with parchment paper.
  2. In a medium bowl, combine shredded apples, raisins, sugar, cinnamon, and lemon juice. Toss until evenly coated.

2. Assemble the Strudel

  1. On a lightly floured surface, roll out the puff pastry into a 12×10-inch rectangle. Transfer to the prepared sheet.
  2. Brush melted butter over the center of the pastry, leaving a 1-inch border.
  3. Mound the apple mixture along the length of the pastry.
  4. Fold the short edges over the filling, then roll the pastry into a neat log.

3. Bake & Finish

  1. Place the strudel seam-side down. Brush the top with beaten egg and sprinkle with turbinado sugar.
  2. Bake for 30 minutes, or until golden and puffed.
  3. Let cool slightly, dust with powdered sugar if desired, slice and serve warm.

Tips & Variations

  • Storytime: I still remember making strudel with my grandmother—her secret was a splash of rum-soaked raisins!
  • Flavor Boosters: Swap raisins for dried cranberries or chopped walnuts for extra crunch.
  • Make-Ahead: Assemble the strudel, wrap it in plastic, and refrigerate up to 4 hours before baking.
  • Serving: A scoop of vanilla ice cream or a dollop of whipped cream takes this strudel to the next level.
