Ingredients
  

  • 1 cup tightly packed chopped fresh parsley leaves
  • 1 cup tightly packed chopped fresh cilantro leaves
  • 2 tablespoons red wine vinegar
  • 1/4 cup finely chopped red onion
  • 3 cloves garlic minced
  • 1 teaspoon salt
  • 1 teaspoon dried oregano
  • 1/4 teaspoon crushed red pepper flakes
  • 1/2 teaspoon freshly ground black pepper
  • 1/2 cup extra-virgin olive oil

Method
 

  1. In the bowl of a food processor, add parsley, cilantro, red wine vinegar, red onion, garlic, salt, oregano, red pepper flakes, and black pepper. Pulse a few times until everything is roughly chopped.
  2. While pulsing, slowly pour in olive oil until the sauce comes together, but avoid over-processing to keep a chunky texture.
  3. Transfer chimichurri to a bowl, cover, and let it rest at room temperature for at least 2 hours to let the flavors meld.
  4. Before serving, give it a quick stir. Adjust salt or vinegar to taste.
  5. Spoon over grilled steak, roasted chicken, or vegetables. Enjoy!
