Method
- Preheat the oven to 350°F (175°C). Line baking sheets with parchment paper and set aside.
- In a bowl, whisk together flour, baking powder, and salt. Set aside.
- In another large bowl, cream butter and sugar together until light and fluffy, about 2-3 minutes using an electric mixer.
- Add egg and vanilla extract to the creamed mixture. Beat until combined.
- Gradually mix dry ingredients into the wet ingredients until a soft dough forms. If dough feels too dry, add 1 tablespoon of milk.
- Shape the dough into a disc, wrap in plastic wrap, and chill for at least 1 hour or overnight.
- Roll out chilled dough on a lightly floured surface to 1/4 inch thickness. Cut into desired shapes using cookie cutters.
- Place cookies on prepared baking sheets and bake for 8-10 minutes until edges are lightly golden. Cool on a wire rack.
- Prepare icing by whisking powdered sugar, milk, and vanilla until smooth. Adjust consistency as needed.
- Once cookies are completely cool, decorate with icing, sprinkles, and colored sugars. Allow icing to set before stacking or storing.
