Ingredients
  

  • 3 cups all-purpose flour sifted
  • 1 teaspoon baking powder
  • 1 cup butter softened
  • 1 cup sugar
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 1 teaspoon salt
  • 2 cups powdered sugar
  • 2 tablespoons milk
  • 1 teaspoon vanilla extract for icing

Method
 

  1. Preheat the oven to 350°F (175°C). Line baking sheets with parchment paper and set aside.
  2. In a bowl, whisk together flour, baking powder, and salt. Set aside.
  3. In another large bowl, cream butter and sugar together until light and fluffy, about 2-3 minutes using an electric mixer.
  4. Add egg and vanilla extract to the creamed mixture. Beat until combined.
  5. Gradually mix dry ingredients into the wet ingredients until a soft dough forms. If dough feels too dry, add 1 tablespoon of milk.
  6. Shape the dough into a disc, wrap in plastic wrap, and chill for at least 1 hour or overnight.
  7. Roll out chilled dough on a lightly floured surface to 1/4 inch thickness. Cut into desired shapes using cookie cutters.
  8. Place cookies on prepared baking sheets and bake for 8-10 minutes until edges are lightly golden. Cool on a wire rack.
  9. Prepare icing by whisking powdered sugar, milk, and vanilla until smooth. Adjust consistency as needed.
  10. Once cookies are completely cool, decorate with icing, sprinkles, and colored sugars. Allow icing to set before stacking or storing.
