Ingredients
  

  • 4 4-ounce lamb chops
  • 2 tablespoons olive oil
  • 4 cloves garlic minced
  • 2 tablespoons fresh rosemary chopped
  • 1 teaspoon sea salt
  • 1/2 teaspoon freshly ground black pepper
  • 1 teaspoon lemon zest optional

Method
 

  1. Preheat the oven to 425°F (220°C).
  2. Pat the lamb chops dry with paper towels to ensure proper browning.
  3. In a small bowl, mix olive oil, minced garlic, chopped rosemary, salt, pepper, and lemon zest (if using).
  4. Rub the herb mixture thoroughly on both sides of each lamb chop.
  5. Arrange the seasoned lamb chops on a baking sheet lined with parchment paper or in a roasting pan.
  6. Roast in the preheated oven for 15-20 minutes, depending on thickness and desired doneness. For medium-rare, aim for an internal temperature of 145°F (63°C).
  7. Remove from the oven and let the lamb chops rest for 5 minutes before serving to allow juices to redistribute.
