- Preheat the oven to 425°F (220°C).
- Pat the lamb chops dry with paper towels to ensure proper browning.
- In a small bowl, mix olive oil, minced garlic, chopped rosemary, salt, pepper, and lemon zest (if using).
- Rub the herb mixture thoroughly on both sides of each lamb chop.
- Arrange the seasoned lamb chops on a baking sheet lined with parchment paper or in a roasting pan.
- Roast in the preheated oven for 15-20 minutes, depending on thickness and desired doneness. For medium-rare, aim for an internal temperature of 145°F (63°C).
- Remove from the oven and let the lamb chops rest for 5 minutes before serving to allow juices to redistribute.
