- Heat 2 tablespoons of olive oil in a large skillet over medium heat. Add the sweet Italian sausage links and cook, turning occasionally, until browned on all sides, about 5 to 7 minutes. Remove sausages and let rest.
- In the same skillet, add sliced onions, bell peppers, and minced garlic. Season with oregano, basil, salt, and pepper. Sauté until vegetables are tender and slightly caramelized, about 8 to 10 minutes.
- Slice the rested sausages into 1-inch pieces and return them to the skillet. Stir to combine with the peppers and onions, allowing the flavors to meld for 2 to 3 minutes.
- For an easy sandwich, spoon the sausage and peppers mixture into warm rolls or serve over pasta or polenta.
- Garnish with fresh parsley and serve hot.
