Italian Sausage, Peppers, and Onions

Ingredients
  

  • 6 4-ounce links sweet Italian sausage
  • 2 bell peppers red and green, sliced into strips
  • 1 large yellow onion thinly sliced
  • 2 cloves garlic minced
  • 2 tablespoons olive oil
  • ½ teaspoon dried oregano
  • ½ teaspoon dried basil
  • Salt and freshly ground black pepper to taste
  • 6 Italian sandwich rolls or crusty bread optional

Method
 

  1. Heat 2 tablespoons of olive oil in a large skillet over medium heat. Add the sweet Italian sausage links and cook, turning occasionally, until browned on all sides, about 5 to 7 minutes. Remove sausages and let rest.
  2. In the same skillet, add sliced onions, bell peppers, and minced garlic. Season with oregano, basil, salt, and pepper. Sauté until vegetables are tender and slightly caramelized, about 8 to 10 minutes.
  3. Slice the rested sausages into 1-inch pieces and return them to the skillet. Stir to combine with the peppers and onions, allowing the flavors to meld for 2 to 3 minutes.
  4. For an easy sandwich, spoon the sausage and peppers mixture into warm rolls or serve over pasta or polenta.
  5. Garnish with fresh parsley and serve hot.
