Ingredients
  

  • 1 cup mixed berries
  • 1 1/2 cups all-purpose flour
  • 3/4 cup sugar plus extra for topping
  • 1/2 cup coconut oil or substitute butter/canola oil
  • 2 eggs
  • 1/2 cup yogurt or dairy-free yogurt if desired
  • 1/4 cup honey
  • 1/4 cup softened salted butter for optional honey butter
  • 1 tsp baking powder
  • 1/2 tsp salt

Method
 

  1. Preheat your oven to 375°F (190°C) and line a muffin tin with paper liners.
  2. Sift together the flour, baking powder, and salt in a large bowl. In a separate bowl, beat the eggs with the coconut oil (or your chosen alternative), sugar, and yogurt until well blended.
  3. Gently fold the dry ingredients into the wet mixture using a spatula. Carefully stir in the mixed berries, taking care not to break them apart.
  4. Distribute the batter evenly into the muffin cups. Top each muffin with a light dusting of extra sugar to create that irresistible sugary crisp.
  5. Bake for 20-25 minutes or until a toothpick inserted in the center comes out clean and the tops are beautifully golden.
  6. Optional: For an extra indulgence, blend 1/4 cup honey with 1/4 cup softened salted butter. Once the muffins are out of the oven and still warm, spread this honey butter gently over each muffin for an elevated flavor experience.
