One-Pan Herbed Salmon with Garlic-Dill Potatoes

Ingredients
  

  • pounds baby potatoes halved
  • 2 tablespoons olive oil divided
  • 4 salmon fillets 4–6 oz each, skin on
  • 3 tablespoons mayonnaise
  • tablespoons Dijon mustard
  • 1 garlic clove minced
  • 1 teaspoon lemon zest + wedges for serving
  • ¼ teaspoon red pepper flakes optional
  • 4 tablespoons butter melted
  • 2 tablespoons fresh dill finely chopped
  • Salt and pepper to taste

Method
 

  1. Preheat oven to 425°F. Line a sheet pan with parchment. Toss potatoes with 1 tbsp olive oil, salt, and pepper. Spread on half the pan; cover loosely with foil.
  2. Steam-roast potatoes for 10 minutes. Remove foil, drizzle with more oil, and push potatoes to one side.
  3. Pat salmon dry, season with salt and pepper. Whisk mayo, Dijon, garlic, lemon zest, and red pepper flakes; spread on salmon. Place fillets on empty pan side.
  4. Drizzle butter over potatoes. Bake 10–12 minutes until salmon reaches 125–130°F and potatoes are golden.
  5. Sprinkle potatoes with dill, squeeze lemon over fish, garnish with extra dill. Serve hot.
