- Preheat oven to 425°F. Line a sheet pan with parchment. Toss potatoes with 1 tbsp olive oil, salt, and pepper. Spread on half the pan; cover loosely with foil.
- Steam-roast potatoes for 10 minutes. Remove foil, drizzle with more oil, and push potatoes to one side.
- Pat salmon dry, season with salt and pepper. Whisk mayo, Dijon, garlic, lemon zest, and red pepper flakes; spread on salmon. Place fillets on empty pan side.
- Drizzle butter over potatoes. Bake 10–12 minutes until salmon reaches 125–130°F and potatoes are golden.
- Sprinkle potatoes with dill, squeeze lemon over fish, garnish with extra dill. Serve hot.
