One-Pan Herbed Salmon with Garlic-Dill Potatoes

Ingredients
- 1½ pounds baby potatoes, halved
- 2 tablespoons olive oil, divided
- 4 salmon fillets (4–6 oz each), skin on
- 3 tablespoons mayonnaise
- 1½ tablespoons Dijon mustard
- 1 garlic clove, minced
- 1 teaspoon lemon zest + wedges for serving
- ¼ teaspoon red pepper flakes (optional)
- 4 tablespoons butter, melted
- 2 tablespoons fresh dill, finely chopped
- Salt and pepper, to taste
Instructions
- Preheat oven to 425°F. Line a sheet pan with parchment. Toss potatoes with 1 tbsp olive oil, salt, and pepper. Spread on half the pan; cover loosely with foil.
- Steam-roast potatoes for 10 minutes. Carefully remove foil, drizzle with a bit more oil, and push potatoes to one side.
- Pat salmon dry, season with salt and pepper. In a small bowl, whisk mayo, Dijon, garlic, lemon zest, and red pepper flakes. Spread over tops of salmon; tuck fillets onto the empty side of the pan.
- Drizzle butter over potatoes. Return pan to oven and bake 10–12 more minutes, until salmon is just cooked through (125–130°F internal) and potatoes are golden.
- Sprinkle potatoes with dill, squeeze lemon over fish, garnish with extra dill if desired. Serve straight from the pan or transfer to a platter.
