These crispy home fries are super easy to make and simply seasoned; perfect for a family-pleasing hearty breakfast or brunch with your favorite eggs.

Ingredients
  

  • 3 medium russet potatoes scrubbed and cubed
  • 2 tablespoons vegetable oil or melted butter
  • ½ teaspoon kosher salt
  • ¼ teaspoon freshly ground black pepper
  • ½ teaspoon smoked paprika optional
  • 1 small yellow onion diced (optional)
  • Fresh parsley chopped (for garnish)

Method
 

  1. Gather all ingredients and pat the cubed potatoes dry with a clean kitchen towel to remove excess moisture.
  2. Preheat a large skillet over medium-high heat; add oil or butter and let it get hot but not smoking.
  3. Carefully add the potato cubes in an even layer; sprinkle with salt, pepper, and paprika.
  4. Cook undisturbed for 5–7 minutes until the bottom is golden brown; flip the potatoes using a spatula.
  5. Add diced onion around the potatoes; continue cooking and stirring occasionally for another 8–10 minutes until crispy and tender.
  6. Remove from heat, transfer to a serving dish, garnish with fresh parsley, and serve hot.
