Very Easy Risotto

This easy risotto recipe is made with sauteed green onion and Parmesan for a quick and easy stovetop dish that doesn't require constant stirring.

Ingredients
  

  • 2 tablespoons butter
  • 1 cup Arborio rice
  • 2 green onions thinly sliced
  • 4 cups water
  • 1 teaspoon chicken bouillon
  • ¼ teaspoon black pepper
  • ¼ cup grated Parmesan cheese

Method
 

  1. Melt butter in a large skillet over medium-high heat.
  2. Cook and stir green onion in hot butter briefly, about 1 minute.
  3. Add rice to the skillet; cook and stir until the rice is lightly toasted, 2 to 3 minutes.
  4. Pour in water; stir in chicken bouillon and pepper.
  5. Bring to a boil, then reduce heat to medium-low. Cover and simmer for 20 minutes.
  6. Stir in Parmesan cheese before serving to create a creamy texture.
